Grease a baking dish generously with butter.
Spread cubed bread evenly into the dish.
In a large bowl, whisk together eggs, milk, melted butter, brown sugar, maple syrup, vanilla, cinnamon, and salt.
Fold in apple filling and half of the chopped pecans.
Pour mixture evenly over the bread cubes and gently press bread down so it absorbs the custard.
Sprinkle remaining pecans and white sugar over the top for a crunchy caramelized finish.
Bake for 40–45 minutes until golden brown, bubbling, and set in the center.
Let cool slightly before serving so the sweet syrup thickens beautifully.
