Separate the eggs and whisk the whites until you get soft peaks. Set aside in the fridge.
Add sugar, vanilla, milk, salt and flour to the egg yolks and whisk until very well combined.
You can use a stand mixer for this recipe.
Add little sparkling water if the mixture seems to stiff.
Now carefully fold in the egg whites and finally your apples.
Cook both sides in a greased pan/ skillet on medium heat until they are golden and cooked through.
Make them any size you like and served with nut butter or cinnamon sugar or really anything you can think of.
