Cheesy Chilli With Sweet Potato Mash
  1. Pick through beans, soak 4 hours or overnight. Drain and simmer 30–45 minutes until tender.

  2. Bake sweet potatoes at 400°F for 55–65 minutes until soft.

  3. In a Dutch oven, brown beef and onion until no longer pink. Add garlic, sugar, and chili mix; cook 1 minute.

  4. Add beans, tomatoes, broth, and beer. Simmer 30–45 minutes until slightly reduced. Season with salt and pepper.

  5. Split baked sweet potatoes, fluff insides, and fill each with chili.

  6. Top with cheddar and bake 20–25 minutes until cheese melts. Garnish with cilantro, avocado, or sour cream.
