Start by adding tomatoes, mushrooms, broccolini, onion, rosemary, thyme and salt to a baking dish.
Drizzle with olive oil and mix to coat.
Bake in the oven.
Remove from oven and add orzo and vegetable stock, mix together.
Cover and return to oven.
Remove from oven, sprinkle in parmesan, mix to combine.
Top with mozzarella cheese.
Return to oven until cheese is melted.
