Summer Pork Roast with Garlicky Tomato-Onion Glaze & Roasted Broccoli

    Tomato sauce (or use the diced tomatoes, drained)

    Minced garlic

    1 tbsp olive oil

    Splash of vinegar

    Salt, pepper, optional paprika/thyme

  3. Prepare pork:

  4. Roast uncovered for 1 to 1.5 hours, depending on thickness (internal temp should hit 145°F and rest to 150°F). Spoon pan juices over halfway through.
