Preheat oven to 375°F (190°C).

Tomato sauce (or use the diced tomatoes, drained)
Minced garlic
1 tbsp olive oil
Splash of vinegar
Salt, pepper, optional paprika/thyme
Prepare pork:
Roast uncovered for 1 to 1.5 hours, depending on thickness (internal temp should hit 145°F and rest to 150°F). Spoon pan juices over halfway through.
