Wash and peel the peaches
Puree the peaches, onion and peppers with a food processor
Add all ingredients to a large pot
Bring to a boil and then simmer for at least 30 minutes
Ladle into canning jars
Wipe the rims, remove the air bubbles and add lids
Process in a water bath canner for 15 minutes at a rolling boil
Remove jars and set on the counter, do not disturb for 24 hours.
