  1. Wash and peel the peaches

  2. Puree the peaches, onion and peppers with a food processor

  3. Add all ingredients to a large pot

  4. Bring to a boil and then simmer for at least 30 minutes

  5. Ladle into canning jars

  6. Wipe the rims, remove the air bubbles and add lids

  7. Process in a water bath canner for 15 minutes at a rolling boil

  8. Remove jars and set on the counter, do not disturb for 24 hours.
