Start by placing the cornstarch in a bowl.
Pour in some cold water and mix it well to break up any clumps.
In a separate pan boil water. Once the water reaches a boil, add some of the cornstarch mixture into the boiling water. Mix back and forth to pre-gelatinize the slurry. Watch the video if needed.
Stir quickly to combine the ingredients thoroughly.
After mixing, turn off the heat.
Add a dash of cold water to help cool down the mixture.
Transfer the slurry to the cooler.
It's called pre-gelatinization or making a cooked starch paste. Pre-gelatinization is done to intentionally cook the starch ahead of time so it is ready for instant use. Mainly used for restaurant efficiency-cooking the starch now so the wok can move faster later.
