Spinach Feta Breakfast Casserole - Holoka Home
  1. Preheat oven to 350 degrees. Spray an 8"x8" baking dish with non-stick cooking spray.

  2. In a large skillet, add the olive oil and heat over medium heat.

  3. Add the spinach and cook just until wilted. Remove from heat and set aside.

  4. In a medium mixing bowl, whisk the eggs, milk, garlic powder, and onion powder together. Season with salt and pepper.

  5. Then, mix in the sauteed spinach and sun-dried tomatoes.

  6. Pour the mixture into the prepared baking dish. Crumble the feta cheese over the top of the egg mixture.

  7. Bake the breakfast casserole for 35-40 minutes, or until the eggs have set.

  8. Cut the casserole into squares and serve on its own or in a wrap.
