  1. Start by chopping the veggies. Saute the onion in a drizzle of olive oil.

  2. Once the onion starts to brown add the tomatoes. Season with salt. Pepper. Cumin. Coriander. Paprika. Tomato puree and any spices that you prefer.

  3. Keep cooking the tomatoes on medium low till dissolved.

  4. Switch off the heat then crack the eggs in the mixture. Mix it thoroughly and add a splash of water.

  5. Turn the heat back on low and spread the cheese on top.

  6. Cover and let it cook for 3-5 minutes.

  7. Garnish. Serve with bread and enjoy.
