Sweet Potato Chickpea Blondies
  1. Preheat oven to 350℉ and line a 8×8 pan with parchment paper or grease it with a little extra oil.

  2. In a blender, combine chickpeas, sweet potato, eggs, oil, vanilla, and maple syrup/honey and puree until smooth. Set aside.

  3. In a medium bowl, combine flour, baking soda, baking powder, cinnamon and salt. Stir together to combine.

  4. Pour the contents of the blender into the bowl with the dry ingredients. Stir until just combined.

  5. Fold in chocolate chips.

  6. Pour the batter in the baking dish then top with a few more chocolate chips, if desired. Bake for about 35-40 minutes or until the blondies are golden brown on the top and have an internal temperature of 200℉

  7. Allow blondies to cool completely before slicing and enjoying. Store leftovers in an air tight container in fridge for up to 5 days.
