3-ingredient Samoa Cookies
  1. Pit your dates and soak them in warm water for a couple minutes to soften.

  2. Process the dates in a food processor. Add a little water if needed and scape down the sides until the mixture is smooth.

  3. Stir in the toasted coconut.

  4. Roll the mixture into balls and place them on a lined baking sheet. Flatten with a spoon.

  5. Poke holes in the center (I used a glass straw for this).

  6. Place the cookies in the freezer while you melt your chocolate.

  7. Remove from the freezer and dip the bottom of each cookie in the melted chocolate. Drizzle additional chocolate on top.

  8. Place back in the freezer for about 30 minutes and enjoy!
