Whisk together gochujang, soy sauce, maple syrup, and sesame oil until smooth. Taste and adjust.
Season steak or chosen protein with salt and pepper. Heat oil in a skillet, add garlic, and stir-fry protein for 4–5 minutes until browned. Toss with half the sauce.
Lay out lettuce leaves. Fill each with saucy protein, cucumbers, carrots, and garnishes. Drizzle with more sauce.
Serve warm and let everyone build their wraps.
