In a large pan, sauté the green onions (4) in olive oil (1 tsp) over medium heat for 2–3 minutes until softened. Add spinach (400 grams) and cook until just wilted, about 4-5 minutes. You may need to add the spinach in half at a time, until the first half cooks down. It's a lot of spinach. Lightly salt.Transfer the mixture to a strainer or clean kitchen towel and press or squeeze out as much moisture as possible. Let cool slightly, then combine in a bowl with dill (2 tsp dried), feta (4oz), mozzarella (½ cup shredded), and 1 egg. Mix well and set aside.
In a shallow dish, add 2 eggs, milk (⅓ cup), and olive oil or melted butter (1 tbs) and whisk together very well. Set aside.
(Please see step-by-step photos in post above) Working one pocket at a time, dip two rice paper wrappers into the egg wash, just enough to soften. Wipe off excess liquid with your hands and lay them side by side on a lightly moistened or greased cutting board or baking sheet overlapping each other slightly (about 1-inch) to create a figure 8 shape and then gently fold the bottom edge of the overlapped rice papers up in half toward the center to create a long strip.
Place ~⅓ cup of filling at the bottom left corner in a triangle shape, then fold the bottom left corner over the filling to create a triangle. Continue folding up and over (like a flag) to form a sealed triangle pocket. Once you reach the end, tuck the end piece around the triangle and press gently to seal. Repeat with the remaining filling and wrappers. You should get 6 to 8 pockets, depending on how full you stuff them, I usually get 7.
Air Fryer: Preheat to 400ºF. Lightly spray the top of the pockets with olive oil. Air fry in a single layer for 10-12 minutes, until golden brown and crisp. Check starting at 7 minutes since cook times may vary based on air fryer.
Oven: Preheat to 400ºF. Place pockets on a parchment-lined baking sheet, lightly spray with olive oil, and bake 30-35 minutes, until crisp and browned.
Enjoy warm, straight from the oven or air fryer. Best served fresh while the outside is crisp and the filling is warm and creamy.(see tips above for storage details)
