Cook the Noodles
Bring a large pot of salted water to a boil. Add the noodles and cook until just shy of al dente (about 1 minute less than package directions).
Drain, rinse under cool water, and set aside.
Prepare the Sauce
In a medium bowl, whisk together soy sauce, rice vinegar, honey, cornstarch, chili-garlic sauce, garlic, and 1 tablespoon sesame oil.
Set aside for later.
Cook the Beef
Heat 1 tablespoon sesame oil in a large skillet or wok over medium-high heat.
Add the ground beef, season with salt and pepper, and cook until browned and fully cooked through (about 6–7 minutes).
Transfer to a bowl and set aside.
Sauté the Shrimp
In the same pan, add 1 tablespoon olive oil.
Add the shrimp and cook for 2–3 minutes per side, until pink and opaque.
Remove and set aside with the beef.
Stir-Fry the Vegetables
Using the same skillet, add the onion and cabbage.
Spread them out in an even layer and cook undisturbed for 3 minutes to get a light golden color.
Stir and cook for another 2 minutes until crisp-tender.
Combine Everything
Lower the heat to medium.
Return the beef and shrimp to the pan.
Add the noodles, then pour in the sauce.
Toss well until everything is evenly coated and the sauce slightly thickens (about 2 minutes).
Serve
Transfer to serving bowls.
Top with scallions and sesame seeds, if desired.
Serve hot and enjoy!
