Creamy Spinach Chicken Penne
  1. Cook the penne. Boil in salted water until al dente. Reserve 1 cup of pasta water before draining.

  2. Cook the chicken. Season thighs with salt, pepper, and Italian seasoning. Cook in a large skillet until browned and cooked through. Remove and slice or chop into bite-sized pieces.

  3. Make the sauce. In the same pan, cook garlic for 30 seconds.

  4. Add chicken broth.

  5. Stir in cream cheese until melted.

  6. Add milk until the sauce is smooth.

  7. Stir in frozen spinach and heat through.

  8. Add the chicken and drained penne. Toss everything together.

  9. Add splashes of reserved pasta water until the sauce coats the pasta nicely.

  10. Taste and add more salt and pepper if needed.

  11. Stir in Parmesan if you have it.
