Preheat the oven to 400 F.
Add the tomatoes, peppers, jalapeños and garlic to an oven safe dish.
In a bowl, mix together the olive oil, Silan, paprika and salt until combined.
Pour over the vegetables in the dish and mix together combine.
Cover and bake for 1 hour.
Then uncover and continue baking for about 1-2 hours until the liquid has evaporated and the Matbucha darkens in color.
Since I like mine less chunky, every so often, mix and press down with a spoon.
