Cranberry Orange Quick Bread
  1. Mix 2 cups sugar with zest of 2 oranges and work together with hands

  2. Whisk together 3 cups flour, 2 teaspoons baking powder, and 1 teaspoon salt

  3. Combine 1.5 cups buttermilk, 1 cup vegetable oil, 4 eggs, 2 teaspoons vanilla extract, and 2 tablespoons orange juice

  4. Mix wet ingredients into dry ingredients until just combined, being careful not to overmix

  5. Coat 2 cups fresh cranberries with 2 tablespoons flour and fold into batter

  6. Divide batter evenly between 2 greased loaf pans with parchment paper

  7. Bake at 350°F for 70 minutes until a toothpick comes out clean

  8. Cool for 15 minutes, then remove from pans

  9. Make glaze by mixing 1 cup powdered sugar, 1 teaspoon vanilla extract, and orange juice

  10. Drizzle glaze over cooled bread
