Season chicken thighs generously with Cajun seasoning
Add olive oil to a Dutch oven and heat
Sear chicken thighs on each side for about 3 minutes
Remove chicken from pot and set aside
In the same pot, add onions, carrots, celery, and seasonings
Add flour and mix together
Add chicken broth, chicken bouillon cube, and ½ to 1 cup water
Return chicken to pot and bring to a boil
Shred the cooked chicken and return it to the pot
Add heavy whipping cream or milk and mix
Add additional seasonings as desired
Spoon Cheddar Bay biscuit dough into the pot piece by piece
Bring to a boil, then reduce heat and cover
Simmer for 25-30 minutes until dumplings are cooked through
