Heat sesame oil in a large frying pan, add the onion and carrot. Cook, stirring for 5 minutes.
Add mince and break up with a spoon. Cook for 5-10 minutes until mince is browned all over.
Add garlic and ginger, stir through the mince until fragrant.
In a small jug mix together the soy sauce, brown sugar, vinegar and cornflour. Pour over the mince and stir through.
Dissolve the oxo cube in boiling water and pour into the frying pan.
Let the mixture simmer for a few minutes until the sauce thickens up. Season to taste.
Serve on fluffy white rice with a swirl of sriracha on top and a garnish of spring onion.
