Cook ground beef in a large skillet over medium-high heat. Break it apart as it cooks. Stir in tomato paste and sprinkle on taco seasoning. Cook, stirring occasionally, until fully browned and cooked through. Set aside.
Divide sweet potatoes and beef evenly among four bowls. Top each with a scoop of cottage cheese and sliced avocado. Drizzle generously with hot honey and serve immediately.
