Tandoori-style Tofu Skewers
  1. Preheat the oven or air fryer to the grill function at 200C.

  2. Make the yoghurt marinade: In a bowl, mix the seasoning ingredients into the soy yoghurt. Tear the tofu into bite-sized chunks, toss it in the marinade, and let it sit for 5 minutes to soak up the flavours.

  3. Assemble the skewers: Thread the marinated tofu pieces onto skewers. Grill or air fry for 10 minutes, turning halfway through, until slightly charred at the edges.

  4. Prepare the mint yoghurt: Add all the mint yoghurt ingredients to a blender and blend until smooth. Adjust seasoning to taste.

  5. Plate up: Serve the skewers hot with warm naan, the mint yoghurt, pickled onions, fresh coriander and mint and lime wedges.
