Peach Mead
  1. Add honey and water to fermentor and mix well.

  2. Add Fermaid O and wine tannin, mix to combine.

  3. Pitch Red Star Cote des Blancs yeast.

  4. After fermentation, add frozen peaches and pectic enzyme.

  5. Rack to a new fermentor, pasteurize, and back sweeten to taste.
