Optional: Fold in the sugar-free chocolate chips.
Roll the mixture into 10 equal-sized balls.
Place the balls on a parchment-lined baking sheet.
Bake for 8-10 minutes for a softer cookie. For a crunchier cookie, bake for 10-15 minutes.
Allow the cookies to cool completely before handling.
