Mini Tuna Melts
  1. Preheat the oven to 350°F.

  2. In a mixing bowl, combine the tuna, diced onion, mayonnaise, sour cream, and eggs. Mix well to combine.

  3. Add the shredded white cheddar, parsley flakes, salt, and pepper to the bowl. Mix again until everything is well combined.

  4. Grease a muffin tin with cooking spray or butter. Spoon the tuna mixture into each cup.

  5. Bake for about 25 minutes or until the tops of the mini melts are golden brown.

  6. Let the mini melts cool down before removing them from the tin.

  7. Serve with some sour cream, or store in the fridge for later.
