In a bowl, combine the ricotta and feta, mixing well.
In a separate bowl, whisk together the warm water, oil, and salt.
Layer the pastry as shown in the video, adding the cheese mixture and brushing or spooning over the liquid mixture between layers.
Once assembled, cover and refrigerate overnight if making ahead.
When ready to bake, preheat the oven to 200°C.
Bake for 45 minutes, or until beautifully golden and crisp.
Remove from the pan and let it cool for at least 10 minutes before slicing, if you can wait that long!
