Charred Tomato Bruschetta

This is how to make a delicious bruschetta on the barbecue, topped with smoky and charred tomatoes straight from the grill and drizzled with a simple marinade. Bruschetta literally means “to toast” so this recipe is an ode to that tradition. So next time you turn on that barbecue you need to serve this as an antipasto - everyone is going to love it!

  1. Chop the tomatoes into quarters. Remove the skin from the garlic and cut it longways.

  2. Place the tomatoes and garlic in a sieve and place this on a very hot barbecue. The sieve acts as a frying pan and helps to char and smoke the tomatoes nice and evenly.

  3. Stir the tomatoes occasionally until they are nice and jammy. Remove them from the heat add them to a bowl along with the teared basil, oregano, olive oil and salt. Give it a stir and leave to marinate. Keep the garlic aside.

  4. Meanwhile slice two pieces of sourdough bread, drizzle with olive oil and toast them on the barbecue on both sides. Take the garlic and brush it over the toasted bread.

  5. Top each garlic toasted bread with the tomatoes marinate then drizzle the rest of the marinade over the top. Enjoy
