Mix the warm water, sugar, and yeast and let it sit for 10 minutes.
Add the yeast mixture, flour, and salt to a dough hook and knead for 10 minutes.
Knead the dough by hand for a couple minutes until it forms a smooth ball.
Place the dough in a large bowl coated with olive oil, cover, and let rest for 1 hour.
Punch down the dough and divide it into 8 equal parts.
Shape each part into a ball and poke a hole through the center.
Cover and let rest for 30 minutes.
Boil the bagels for 1 minute, flip and boil for 30 more seconds.
Brush the bagels with an egg wash.
Bake at 400°F for 25 minutes.
