Cut potatoes into 1” rounds.
Line a baking sheet with parchment paper and pour olive oil over top.
Place potatoes on parchment paper, turn over to coat both sides with oil, and sprinkle with salt.
Roast at 500 F for 15 minutes.
Turn over potatoes and roast another 15 minutes.
Add stock and cook another 10 minutes or just until almost all the stock is absorbed.
Garnish with fresh herbs.
