Slice your red onion as you like, but I find the thinner the slice the more is soaks up the flavor.
Gently separate slices by hand and place inside a glass or mason jar.
Top with a few peppercorns and thin garlic slices.
Bring the brine ingredients to a rolling boil and immediately pour it into jars.
Wait 30 min before sealing them.
Put it in the fridge for at least 2 hours (wait 24 for the full flavor).
