Roasted Potato Salad (vegan & Creamy)
  1. Cook Potatoes: Boil baby potatoes until tender. Preheat oven or air fryer to 190°C (375°F).

  2. Roast: Place boiled potatoes on a baking tray. Smash gently, drizzle with olive oil, salt, and pepper. Roast for 30-40 minutes (oven) or air fry for 20 minutes until crispy.

  3. Dressing: Mix yogurt, mayo, garlic, herbs, salt, and pepper. Stir in cucumber and red onion.

  4. Combine: Once the potatoes cool, add them to the dressing and toss to coat.
