Heat large lidded skillet over medium low heat, add olive oil, minced garlic and sliced onions and cook 3-5 minutes or until garlic is golden brown and onions are translucent, stirring frequently.
Add ground beef and brown.
Move to baking dish, sprayed with cooking spray. Add prepared zucchini and squash, cheese, corn, and green chilie and stir to combine,
Top with cheddar cheese, cover with foil and cook at 425 for 25 min. Serve warm.
