3 Ingredient Mousse Cake with a secret ingredient!! Makes 6-7 small slices
300g cooked butternut squash - boiled or steamed
150g dark chocolate/ or milk chocolate
50g butter, I used salted butter
Step 1: Line a loaf tin (or something similar) with parchment paper.
Cook the butternut squash, steam it if you can- or boil until soft and strain. Add it to a food processor.
Step 2: Melt the chocolate and butter in the microwave or in a bowl over a pot of simmering water. Blend with the butternut squash until silky smooth. Pour into the loaf tin, smooth with a spoon or spatula, gently tap to let any trapped air out. Pop in the fridge to set for at least 3 hours.
Step 3: Slice and serve. To get perfect slices dip a sharp knife in boiling water then dry with kitchen towel and slice. Clean and repeat for every slice.
