Strawberry Shortcake
  1. Prepare the cake batter by creaming the butter and sugar together until light and fluffy.

  2. Add the eggs one at a time, beating well after each addition.

  3. Stir in the vanilla extract.

  4. In a separate bowl, whisk together the cake flour, baking powder, and salt.

  5. Alternate adding the dry ingredients and buttermilk to the butter mixture, mixing just until combined.

  6. Pour the batter into a greased and floured 9-inch round cake pan.

  7. Bake at 350°F for 55 minutes, or until a toothpick inserted in the center comes out clean.

  8. Allow the cake to cool completely.

  9. Make the whipped cream by beating the cream cheese and powdered sugar together until smooth.

  10. Add the heavy whipping cream and vanilla extract, and beat until stiff peaks form.

  11. Prepare the strawberries by tossing the sliced berries with the granulated sugar and lemon juice.

  12. To assemble, slice the cake in half horizontally.

  13. Spread the whipped cream over the bottom layer, then top with the sugared strawberries.

  14. Place the top layer of the cake over the strawberries.
