Preheat your oven to 200°C (392°F). Place the fig halves onto an oven tray and drizzle with honey. Roast for 10 minutes.
Cut the cheese into slices approximately 20mm (about 0.8 inches) thick and lightly dust them with flour.
Heat the olive oil in a pan over medium-high heat. Once hot, fry the cheese slices on both sides until golden brown.
To serve, arrange the fried cheese and roasted figs on a plate. Garnish with fresh lemon wedges and mint leaves.
