Preheat oven to 425° F.
Line a large baking sheet with parchment paper; lightly coat with spray. Set aside.
Add nutritional yeast, oregano, paprika, salt, and pepper to a small mixing bowl; stir to combine.
Roll tofu cubes in yeast mixture until evenly coated; place in a single layer on prepared sheet.
Bake for 20 to 25 minutes, or until golden. Let cool for 5 minutes.
Serve immediately, or store refrigerated in an airtight container for up to 3 days.
notes:
•You don't need to press or pat dry the tofu with paper towels. The moisture helps the
spices stick to the tofu more easily.
