Chilli Oil Basil Pasta
  1. Cook your pasta of choice until it is just shy of al dente. Drain reserving the pasta water.

  2. Heat a small splash of oil in a large pan. Add 4-5 cloves of garlic, sliced lengthwise into "chips."

  3. As the garlic starts to brown, add 1-2 tbsp chilli oil

  4. Once the chilli-garlic mixture is sizzling add 1 tbsp of light soy sauce + ½ tbsp dark soy sauce + 1 tbsp of (vegetarian) oyster sauce + a splash of the reserved pasta water

  5. Let the sauce sizzle and thicken , then toss in your cooked pasta with : Heaps of fresh basil, Sliced scallion, Grated Parmesan

  6. Serve hot with your favourite garnishes and DIVE IN!
