Category 5 Chili

Requires a large crock pot for cooking and a large skillet for prep

  1. In large skillet, break up, mix and brown the ground meats together for 10-15 minutes

  2. Turn on large crock pot on low, add peppers, tomatoes, beans, beer

  3. Using slotted spoon, transfer meat to crock pot, leaving all fat in the skillet

  4. Brown the onions in the fat until translucent, 5-10 minutes

  5. Add the garlic and spices and stir well so all the spice is heated and fragrant, 2 minutes

  6. Transfer this mixture to the crock pot, and mix with the meat and vegetables already there

  7. Cook on low for 8 hours or high for 4 hours, adding the corn halfway through (it will stay a little crunchier that way). A lot of liquid will be released from the vegetables by the end - even if the chili looks thick at the beginning, DO NOT add broth

  8. Serve as chili topped with cheese, sour cream, jalapenos, green onions, crackers, corn bread or whatever your preferred style
