Lamb Burgers
  1. Heat about 1 tablespoon olive oil in a saute pan over medium heat. Add sliced onions, stirring occasionally, until onions are golden brown. Season with kosher salt. Set aside.

  2. Mince or grate one small onion.

  3. Combine oregano, salt, pepper, grated onion and lamb, and mix well. Divide into 8 equal patties. (about 2 ½ ounces each)

  4. Grill or fry patties until done. About 3 minutes on each side, depending on thickness.

  5. Combine ¾ cup tzatziki with ¼ cup crumbled feta cheese.

  6. Assemble sliders, topping lamb patties with 1 or 2 tablespoons of tzatziki sauce, grilled onions and fresh arugula.
