Combine the sugar, yeast, olive oil, water and milk in a bowl. Set aside for 5 minutes until the mixture starts to froth.
Mix the salt in with the flour. Now add the yeast mixture to the flour and stir with a cutlery knife until the dough starts to come together.
Bring the dough together with your hands and transfer to a lightly floured surface.
Knead the dough for 5 minutes until smooth. Shape into a ball and place in a lightly oiled bowl. Cover and leave to rise in a warm place for 40 minutes.
When the dough has risen press on it to knock back some of the air and then divide into 3 equal pieces.
Shape the dough into balls and then roll out into a circle roughly 20cm in diameter.
Heat a frying pan over a medium heat and cook the breads for 2 minutes on each side until they puff up. Transfer the breads to a plate and cover with a tea towel while you cook the rest.
