For the Soup
In a large pot, heat coconut oil.
Sweat onions and garlic until soft and fragrant (~5–7 minutes).
Add ginger and caraway seeds, stir for 30 seconds.
Add sliced carrots and vegetable stock. Simmer uncovered for ~25 minutes until soft.
Add coconut milk, simmer 5 minutes more.
Blend the soup until completely smooth. Strain for extra smoothness if desired.
Season with salt and white pepper to taste.
Make the Soup
For the Hidden Spiced Carrot Purée
Boil or steam the diced carrot until very soft (~10–12 minutes).
Blend with cumin, paprika, cayenne, coconut milk, butter, and salt until smooth.
Set aside.
Make the Spiced Carrot Purée
Caraway Oil
Heat oil in a small pan.
Add caraway seeds and toast gently for about 2 minutes until fragrant.
Remove from heat and let cool. Strain or use as-is.
Make the Caraway Oil
Garnish & Toppings
Spoon 1 tbsp of the spiced carrot purée into the center of a warm bowl.
Gently pour the hot soup over it to hide the purée.
Garnish with dots of crème fraîche, a drizzle of caraway oil, and other toppings.
Serve hot.
