Grandma’s Lemon Meringue Pie
  1. Preheat oven to 325°F (165°C).

  2. Whisk sugar, flour, cornstarch, and salt in a saucepan. Stir in water, lemon juice, and zest. Bring to boil.

  3. Add butter and stir until melted.

  4. In a small bowl, temper egg yolks with some hot mixture. Whisk back into the saucepan.

  5. Bring to boil again and cook until thick. Remove from heat and pour into baked crust.

  6. Beat egg whites until foamy. Gradually add sugar, beating to stiff peaks.

  7. Spread meringue over hot filling, sealing edges to crust.

  8. Bake 20–25 minutes until meringue is golden brown.

  9. Cool at room temperature, then refrigerate before slicing.
