Cook berries for about 10 minutes on medium. Taste – add some lemon juice. Taste – add some brown sugar. Thicken with 3 tbsp. cornstarch.
Coat bottom crust with egg white.
Put in pie dish with crust on the bottom.
Sprinkle with cinnamon and dot with butter.
Roll out top pie crust. Cut out design and place on top. Crimp edges.
Bake at 350° on lower rack for about an hour. Wait for crust to brown and filling to bubble.
Let cool and serve with ice cream.
