Turn on instant pot to sauté setting. Add avocado oil. Once hot, add the pork, cooking evenly for about 5-6 minutes. You will need to work in a few batches—all good.
Once browned, add the rest of the ingredients. Stir well. Cover instant pot. Turn to manual pressure and set to high and cook for 30 minutes, quick release.
Remove cover and transfer pork to a tray. Shred with two forks.
To get it crispy, place pork on a tray and broil for ~3 minutes until edges are crispy.
Add rice between bowls, pico, guacamole, carnitas meat and pickled onions.
