  1. Dice the onion and spread evenly on the bottom of a crock pot. Sprinkle half the taco seasoning packet over the onions and add a cup of chicken stock. Lay the chicken breasts over the top of the onions and use the rest of the taco seasoning to season the top of the meat.

  2. Add in the green chiles and the corn. Top with salsa, cover and let cook on low 6 hours or high 4 hours.

  3. In a pan on low heat with no oil, lightly toast the tortillas on both sides. Cut into 1.5" squares.

  4. Shred the chicken. Add the other cup of chicken stock, sour cream, and cheese mix.

  5. Once the cheese is melted add the tortillas and stir to mix. Let stand for 15-20 minutes.

  6. (Best served right away. If serving later, serve over the tortillas instead of combining them into crock pot.
