Preheat the broiler. Arrange the tomatillos, poblanos, jalapeño, and onion on a baking sheet and broil until charred on all sides. Remove from the oven and peel the peppers.
Add the roasted peppers, onion, tomatillos, garlic, and chicken bouillon to a blender. Blend until smooth.
In a large pot or Dutch oven, heat oil over medium-high heat. Add the pork and sear until browned on all sides. Season with salt and pepper to taste.
Add the chili powder, cloves, oregano, cumin, and bay leaves to the pot. Stir and toast the spices until fragrant.
Pour the blended tomatillo mixture into the pot and stir well. Cover and cook on low for 3–4 hours, or until the pork is tender.
Blend cilantro with 1 cup water and stir it into the pot just before serving.
Can be served in a bowl, burrito, nachos, etc. Best served with the tortillas in episode 51 of “What the Fuck Do I Use My Bread Maker For?” along with your favorite toppings like lime, sour cream, cilantro, avocado, and cheddar cheese.
