Preheat oven to 350°F and grease loaf pan.
Mash bananas in a bowl until creamy.
Stir in oil/applesauce, vanilla, and sugar or dates.
In another bowl, whisk flour, baking soda, baking powder, salt, and cinnamon if using.
Fold dry mixture into wet ingredients gently until just combined.
Add almond milk if batter feels too thick.
Fold in walnuts or chocolate chips if desired.
Pour batter into prepared pan and bake 50–60 minutes.
Test with toothpick; if clean, remove from oven.
Cool for 10 minutes before slicing.
