Combine flour, cornflour, salt and chilli flakes with water until you have a thin, silky batter
Finely chop and core the cabbage and slice the carrots and spring onions into matchstick
Fold the vegetables through the batter
Heat a non-stick frying pan on medium and add the oils
Press in the batter and cook for 5-6 minutes on each side until golden and crisp
Mix soy sauce, sesame oil, rice vinegar and maple syrup for dipping sauce
Add furikake or sesame seeds to the dipping sauce
Slice the pancake, dunk in sauce, and eat immediately
