Cut and cube your sweet potatoes.
Season with garlic powder, onion powder, salt & pepper.
Roast at 400°F for 25 minutes until fork-tender with crispy edges.
While they roast, cook your ground beef and season it with garlic powder, onion powder, salt & pepper.
In a bowl, mix diced tomatoes, chopped onion, dried Italian seasoning, a little salt, and fresh lime juice.
Spoon that fresh mix right over the beef.
Add your cheese.
Mix 4 tablespoons each of mayo, sour cream, mustard, honey, and lime juice for the Honey-Lime Drizzle Sauce.
Whisk until smooth and creamy.
Sprinkle a little parsley if you want and drizzle generously over the top.
