Preheat oven to 325F
Put flour, corn starch and baking powder in a bowl and whisk to combine. Set aside.
In another bowl, cream butter and then add sugar and cream again on low.
Add eggs, 3 at a time, mixing well between adding.
Add coconut essence and coconut milk. Mix until everything is smooth.
Add shredded coconut and ½ the flour mixture. Mix on low till incorporated.
Add the rest of the flour mixture and mix till just combined.
Place in 2 lined and greased loaf pans and sprinkle with coconut. Cook at 325F for approx 50-60 minutes.
Transfer to a wire cooling rack to cool completely before icing.
