Coconut Loaf (Mrs. Brown)
  1. Preheat oven to 325F

  2. Put flour, corn starch and baking powder in a bowl and whisk to combine. Set aside.

  3. In another bowl, cream butter and then add sugar and cream again on low.

  4. Add eggs, 3 at a time, mixing well between adding.

  5. Add coconut essence and coconut milk. Mix until everything is smooth.

  6. Add shredded coconut and ½ the flour mixture. Mix on low till incorporated.

  7. Add the rest of the flour mixture and mix till just combined.

  8. Place in 2 lined and greased loaf pans and sprinkle with coconut. Cook at 325F for approx 50-60 minutes.

  9. Transfer to a wire cooling rack to cool completely before icing.
