30 Minute Cilantro Lime Taco Bowl With Sweet Potatoes
  1. Cut 2 medium sweet potatoes into cubes and toss with olive oil, salt and pepper

  2. Roast sweet potatoes at 400°F until golden and tender, about 25 minutes, or air fry at 400°F for 13-15 minutes

  3. Spray avocado oil in a pan and cook minced onion and 4 garlic cloves until fragrant

  4. Add 1.25 lbs lean ground beef to the pan and cook until browned

  5. Stir in 2 tbsp taco seasoning and ½ cup water, simmer until combined

  6. Blend 1 large avocado, ⅓ cup light sour cream, ⅓ cup plain Greek yogurt, ⅓ cup fresh cilantro, juice from 2 limes, 1 tbsp olive oil, and 3 garlic cloves until smooth

  7. Add water if sauce is too thick, season with salt and pepper to taste

  8. Assemble bowls with roasted sweet potatoes and seasoned ground beef

  9. Top with cilantro lime sauce, fresh jalapeños, cotija cheese, and hot honey if desired

  10. Garnish with fresh cilantro and serve
